A taste of the tropics! These drinks will make you dream
of faraway places, hot sun, blue sky and tropical fruits
complemented by the full-bodied taste of tea. Let our
recipes spirit you away to another world!
Hot tea with honey:
(makes 2 glasses)
400 ml water
3 tsp Darjeeling tea, second flush
Juice of 1/2 lemon
Juice of 1/2 orange
1 tbsp clear orange-blossom honey
1. Bring the water to the boil. Add the boiling water to the tea and leave to stand for 4 minutes.
2. Filter the tea through a strainer and flavour with the lemon and orange juice and the honey.
3. Pour the tea into two glasses and serve hot.
Tip:
Try this drink with Assam tea for a change, flavouring it with jasmine-blossom honey.
Lime Cream Tea:
(makes 2 glasses)
1 lime
10 lemon balm leaves
400 ml water
4 tsp Assam tea
2-3 tsp sugar
4 scoops lemon sorbet
100 ml Bitter Lemon
1. Rinse the lime in hot water and grate the peel finely. Cut the lime in half and squeeze out the juice. Wash and dry the lemon balm leaves and reserve 4 of the best leaves. Chop the remaining leaves into fine strips.
2. Bring the water to the boil. Add the boiling water to the tea and leave to stand for 2 minutes. Strain and flavour with sugar and lime juice. First allow to cool in the fridge, then place in the freezer for approx. 15 minutes.
3. Place 2 scoops of lemon sorbet in each glass and pour on the ice-cold tea and Bitter Lemon. Decorate with lemon balm leaves.
Iced tea:
(makes 2 glasses)
400 ml water
4 tsp Assam tea
1 unwaxed lemon
2-3 tsp sugar
8 ice cubes
2 sprigs of mint
1. Bring the water to the boil. Add the boiling water to the tea and leave to stand for 2-3 minutes.
2. Rinse the lemon in hot water and cut in half. Slice one half thinly and squeeze the other half. Strain the tea and flavour with sugar and lemon juice.
3. Place the ice cubes and lemon slices in two tall glasses,
pour in the hot tea and garnish with a sprig of mint.
Serve immediately.
New Year's Eve Punch:
(serves 4)
1 l water
1 piece fresh ginger (approx. 3 cm)
2 cloves
3 cm cinammon stick
6 tsp oolong tea
Rock candy
1. Peel the ginger and chop up small. Boil up with the other spices in the water for 5 minutes.
2. Strain, retain the liquid and pour over the tea leaves. Leave to stand for 3 minutes then strain again.
Green-tea based apple drink:
(serves 2)
1/2 l water
2 TL green tea (gunpowder)
1 small apple
Lemon juice
100 ml clear apple juice
1. Once the water has boiled, pour half of it over the tea leaves. Leave this first infusion to stand for 90 seconds then tip it away.
2. Let the second infusion stand for 3 minutes, then strain and leave to cool.
3. Wash and core the apple and cut into thin slices. Cover with a little lemon and apple juice immediately to stop the slices from going brown.
4. Distribute the apple juice and slices between two long drink glasses, top up with the green tea and add a few ice cubes.
Iced tea with mint - the ideal pick-me-up for the office!
(makes 1 pot)
1 small bunch of mint
Juice of 4 lemons and 2 oranges - freshly squeezed
4 cups strong Ceylon tea
1 small piece freshly grated ginger
2 cups cold water
Sugar to taste
1. Chop the mint. Pour on the fruit juices and hot tea. Add the ginger and cold water and leave to cool for at least an hour.
2. Serve in a glass with plenty of ice.
Green iced tea:
(makes approx. 2 glasses)
1/2 l water
2-3 tsp green tea
1 cinammon stick
1 tsp honey
1/2 l lemon juice
1. Pour off-the-boil water (approx. 60-70°C) onto the tea and cinammon stick. Leave it to stand for approx. 3 minutes then strain.
2. Add the honey and lemon juice and chill.
Tropical punch:
(serves approx. 4)
500 ml strong, hot Original rooibos tea
500 ml orange juice
300 ml pineapple juice
300 ml apple juice
100 g white sugar (125 ml)
1 l ginger ale
2 oranges, divided into segments
1. Pour the Original rooibos tea, orange, pineapple and
apple juice and sugar into a saucepan. Heat the mixture
over a moderate flame until the sugar has dissolved. Leave
to cool.
2. Shortly before serving, add chilled ginger ale and
orange segments.
