Houjicha Steam Muffins
Japanese muffins - steamed, no-bake
Ingredients
- 3 eggs, size M
- 140 g raw cane sugar
- 300 ml milk
- 5 tbsp rapeseed oil
- 300 g flour
- 2 tsp baking powder
- 5 tsp Houjicha powder (can be ground in a coffee grinder/kitchen machine or with a mortar), made from Houjicha Sumire Organic Tea* (Item #00634)
The steamed Houjicha muffins are extraordinary, sweet, and roasted - for curious baking friends.
Preparation
Preheat the oven to 150°C.
Beat eggs and sugar intensively in a large bowl. Mix the egg and sugar mixture gradually with milk and then add the rapeseed oil. Mix and sieve flour, baking powder and Houjicha powder. Then fold the dry mixture under the dough.
Fill the dough into muffin tins. Place a casserole dish, 1 cm high filled with water, in the oven.
Put the baking tray with the muffins onto the bottom shelf of the oven and bake for 20-30 minutes until a wooden stick comes clean out of the dough.
Alternatively, the muffins can also be steamed in a steam cooker.
